The community was named after Dón Antonio Gil y’ Barbo’. He was born in 1729 at Fort Los Adaes in Nueva España (New Spain), and married Maria Padilla (now Paddie). They were married at the Mission San Antonio de' Valero, a Roman Catholic mission and fortress compound, and site of the Battle of the Alamo in San Antonio, Texas. The family name Ebarb is Spanish. During the late 19th century and early 20th century the name went through various changes: Barbo’, y' Barbo’, Ybarbo’, Ebarbo, and now Ebarb.
